After spending over a week exploring the Big Apple, my biggest takeaway? Just how many food trucks and carts are parked up right in the middle of Manhattan, serving crowds in the heart of the city.
But — we all know looks can be deceiving.

Luckily, I had the chance to sit down with the founders of NYFTA, the organisation that represents over 100 of New York’s top food trucks and vendors. They shared the real story of what it’s like to operate a food truck in such a competitive, fast-paced market.
And what surprised me most? How similar our stories are — from navigating councils and events to juggling growth, burnout, and building community.
